Sometimes we need to just keep it simple. Well, sorta. We had a request for 6 cupcakes bringing together pineapple and coconut. But there couldn't be any actual pieces of pineapple or coconut at the request of the client. So we made pineapple cupcakes by pureeing and straining fresh pineapple. (We pushed it through the sieve ourselves to get every bit of flavor possible without any pulp.) Then we flavored our Italian Buttercream frosting with coconut, getting just the right amount so as to not overpower the pineapple flavor in the cupcake. Happy Birthday Wendell!
